Homemade Instant Pot Beef Stew

Which means we need something warm, hearty and delightful! During the colder months (which we don't have many here in Texas), I love eating stews and soups, especially if it's homemade. Today after church I decided I wanted to make some homemade beef stew, but it no way I'll have it done in time for dinner. I scam through the internet to see if I could use my recipe for beef stew and shorten the time in my Instant Pot. 

My biggest concern about making this stew was time! I knew how to make big stew but wanted it done quickly but with the same goodness as if I cooked it for about 5 hours on the stove or longer in the crockpot. Most recipes I found average time for beef stew in the Instant Pot is about 30 to 35 mintues. So once I had a time frame the rest was on me. 

To me a good beef stew must have tons of beef, so if your not a meat lover then this recipe won't be for you. But you could also cut back it you like. The beef will be the star of show but the potatoes and vegetables will have be a closer second, cause those make it yummy too. I want to be sure when you pick up the spoon you are not fighting for meat and all the flavors are there with eat bite. 

The Instant Pot is a great kitchen appliance to have. I been wanting one for months and since I had it, so many meals have gotten on the table in no time. If you don't have one, after reading this recipe you'll want to run to the store and go get one right away. I'm using a 6 QT instant pot for this recipe. I'm looking into investing in a 3 QT one for smaller things like vegetables and beans. When you are busy mom, you want good quick meals and the Instant Pot allow me to still good the good meals they love, without losing time for other things. Now that's a win! 

Let's dive into the recipe and see how it all came together in a short period of time. Prepping can be done during the cooking process and you will still get done in no time with this recipe. 

Ingredients: 
2 1/2 lbs of Beef Stew Beef
4 or 5 Medium Russet Potatoes (cut in chucks)
1 whole yellow onion (cut in big chunks)
2 cups of thick sliced carrots
3 celery stalk with leaves (cut in chunks)
1 package of whole mushrooms (cut each in half)
1 package of Crock Pot Beef Stew Seasonings
3 cups of water
1/4 Cup of Flour
3 Garlic Cloves (Cut each in half)
2 Tablespoons of Butter or Olive Oil
1 Tablespoons of Italian Seasoning
1/2 Tablespoon of Pepper
1 Tablespoon of Salt
1 Tablespoon of Garlic Powder
2 Tablespoons of Worcestershire Sauce
2 Tablespoons of Soy Sauce




Instructions: 
1. Turn on the Instant Pot on the Sautee feature and add the butter. Cook until melted.
2. While butter is heating up season the beef with: garlic powder, salt, pepper, Italian Seasoning. Once blended with the beef, coat the beef with flour.
3. Place beef and garlic cloves in the instant pot and cook until brown in the butter. Stir beef from time to time but not much. Be sure to monitor it so it don't burn on the bottom. This should take about 7 to 10 minutes.
4. While the beef is browning, chop your potatoes, carrots, onions, celery and mushrooms.
5. Take Crock Pot Beef Stew Seasoning and add to instant pot. Stir in with the beef until coated well.
6. Add vegetables to the instant pot and stir with beef until all blended. Turn off Sautee feature of the instant pot.
7. Add Worcestershire, soy sauce and water to the mixture in the instant pot. Stir together to  make sure it's blended well.
8. Place the the instant pot lid on and select meat feature and set for 35 minutes. Be sure you have the instant pot valve set on sealing.
9. After the instant pot is done cooking allow stew to natural release pressure for 10 minutes. Then turn valve to release remaining pressure.
10. Remove top, stir to mix the flavors. Taste the soup and add more salt if needed.

There you have it! Beef Stew in about 45 minutes! Awesomeness! Something that would have taken all day to cook can be enjoyed with cornbread or crackers in less than a hour. What a way to brighten a gloomy, cold winter day. Enjoy!
