Homemade Instant Pot Beef Stew

The weather outside frightful... Which means we need something warm, hearty and delightful! During the colder months (which we don't have many here in Texas), I love eating stews and soups, especially if it's homemade. Today after church I decided I wanted to make some homemade beef stew, but it no way I'll have it done in time for dinner. I scam through the internet to see if I could use my recipe for beef stew and shorten the time in my Instant Pot.  My biggest concern about making this stew was time! I knew how to make big stew but wanted it done quickly but with the same goodness as if I cooked it for about 5 hours on the stove or longer in the crockpot. Most recipes I found average time for beef stew in the Instant Pot is about 30 to 35 mintues. So once I had a time frame the rest was on me.  To me a good beef stew must have tons of beef, so if your not a meat lover then this recipe won't be for you. But you could also cut back it you like. Y'all it's my favorite time of year! It's Fall Y'all! I look forward to this time of year each year and when it's over I find myself counting down the months and days until it's this time again. I'm like a kid in a candy store when September 1st rolls around, because that's my cue to get out the bins from the closet and start transforming our house into a cozy fall scene. Since I live in Texas we really don't have the joys of seeing much of the trees changing colors and falling to the ground. So a couple years ago I decided I was going to put up a Fall Tree and bring in some fall to my Texas home. I got the idea of a fall tree from going into Hobby Lobby (My Kryptonite) one day and seeing how they decorated a fall tree in front of the store. Now that school is back in session my baking and cooking will get back on track. During the summer months I find myself taking a breaks from baking. Here in Texas it gets so hot in the summer that the last thing I want to do is cut on an oven. I love making special goodies for my boys. Baking for them puts a huge smile on their faces and it also gives me comfort knowing that I can make something homemade to fulfill their appetites. I usually spend my Sunday nights after they have gone to bed baking goodies for the week. I try to stick with recipes that can be keep in the fridge and not go bad during the week or something that can be frozen for them to enjoy throughout the month. One of my favorite things to make for them are muffins. Why muffins? Muffins can be made in big batches, can be frozen and you can create so many different recipes. Back to School, Noooo!

Most parents are counting down the days and can't wait to send their kids off to school or they have already had those first day of school moments. Me on the other hand, well let's just say this is not an easy time for me right now. During the summer there is more freedom, less schedules and less stress. Okay so you could be saying, "What's wrong with a schedule?" NOTHING!!! I love schedules and normalness (if there is such a thing)...it's just getting back to one and staying consistent with it during the whole school year is what's stressful. I was on the phone with one my best friends (Yes I am blessed to have more than one. True friendship are hard to come by these days and I can tell you this...it takes a lot of work and honesty. So through the trials & tribulations it's good to know that in the end I have friends who will go to the end of the earth with me. When you are ready to take the step to share some of the things that bring you joy with others your self doubts take over. As this began to happen for me I came up with every excuse you can imagine to why I was going to put this off later and later. But I have a dear friend who reminded me that God has blessed me with a gift and I have to share that gift with others because that is part of his blessing for me. As a woman of faith I know that I have to keep myself on the path that God has chosen for me, even it the road seems rocky ahead. I love having conversations with God, which mostly leads to me smiling in the end knowing that he has the final say. No matter how stubborn I can be and think the easy road is the path to take, he is always there waiting to put me back where I need to be.
